A year or so ago, my neighborhood got a Fresh Market (TFM) – it’s been a raving success
[dropcap]T[/dropcap]FM has week-long specials, specials on Tuesdays, Thursdays and on the weekends. TFM is one of those high end stores that you have to be savvy about buying – impulse purchases will ding you wallet. Get familiar with grocery chain prices and patiently look around TFM (get their emails on sales, deals and 2 for one). You can always find something better than grocery chain quality and sometimes save a little, but it’s the quality, especially on prepared foods or fish, meats and wines. Their selections and quality on all of the latter are better than Whole Foods. The veggies, a tie.Last week was a special at TFM on wild-caught trout so I picked one up.
You can prepare this recipe a day ahead. Cover it with plastic wrap and refrigerate. Take it out of the fridge about 30 minutes before serving so it can soften. NOTE: You can serve this pate wrapped in Belgian endive leaves, put it on cucumbers, crackers or French/Italian bread.
Easy Smoked Trout Pate (Recipe by Judith Whitmore)
2 tablespoons finely chopped shallot
2 tablespoons fresh lemon juice
1 (8-oz) package cream cheese – make sure it’s softened
1/4 lb. Smoked trout and finely chopped trout, skin discarded
3 tablespoons finely chopped fresh chives
Stir together shallot, lemon juice, and 1/4 teaspoon salt, then beat in cream cheese, trout, and ½ teaspoon pepper with a spoon until combined well. Stir in chives.
